Textured Soy
The most inexpensive meat substitutes are made from soybeans and called either textured soy protein (TSP) or textured vegetable protein (TVP). Textured soy contains all the nutrients found in whole soybeans, except for fat; because it's low in fat and high in fiber, it's a great choice for anyone concerned with lowering their weight or their blood glucose.
Unflavored textured soy contains nothing but defatted soy flour. It's a great choice when you want to add your own flavors to a dish. There are also a variety of flavored textured soy proteins, everything from traditional chicken and beef styles (all vegetarian of course!), to more exotic flavors such as pepperoni and seafood.
Textured soy concentrates are produced with fewer sugars than textured soy, resulting in a higher percentage or concentration of protein. Some people find concentrates easier to digest because of their lower sugar content.
